Canelés Baillardran, Café, Bordeaux

Just a few steps away from the Grand-Théâtre, Bordeaux’s opera house, you can taste canelés at Canelés Baillardran, a specialty of Bordeaux and Aquitaine.

Canelés are small, hand-made cakes with a caramelised shell and a soft centre, flavoured with a drop of rum and vanilla and baked in a fluted, copper cake mould. It is difficult to track the true origins of the canelés but it is proven that their history is strongly related to Bordeaux. Traditionally, the canelé is associated with the nuns of the Annonciades convent in the 18th century although the archaeological excavations can’t prove it. The name of the small cakes derives from the fluted copper cake moulds, because in French cannelé means “fluted”.

Philippe Baillardran, the son of a pâtissier, started his business selling canelés in 1988. The company still follows the top-secret traditional recipe.

In the cafe/boutique, the canelés are available in three sizes (bitesize, lunch and gold) and are sold in boxes (€16.50-€41.60) or individually. You can buy the small, delicious cakes as a present or as a souvenir or even enjoy them with a drink of your choice on the spot. Traditional macaroons and nougat sweets are sold here too.
