DiverXO, which holds the distinctive title of being Madrid's only three Michelin star restaurant, has been challenging expectations and pushing culinary boundaries since it opened in 2007.

DiverXO, which holds the distinctive title of being Madrid's only three Michelin star restaurant, has been challenging expectations and pushing culinary boundaries since it opened in 2007. Owner and head chef David Muñoz has designed a gastronomic experience unlike any other in Spain, or anywhere, for that matter. The décor of the restaurant is slightly mysterious and the lighting is dim - this leaves the diner very curious as to what will emerge from Muñoz’s kitchen each time a new course arrives.

The dishes are equally mysterious, with surprising combinations of ingredients personally sourced and combined by Muñoz, often intended to mislead or disturb the diner (until, of course, they take a bite, and realize that the food is indisputably delicious). Each dish is designed to push the boundaries of what is expected or acceptable in modern cuisine, with experimental combinations and presentations that many would not be brave or creative enough to put together. Diners can choose from one of three tasting menus, ranging from 7 to 12 courses, with guilt-inducing names like "Gluttonous Debauchery" and "Bacchanal Gluttony", any one of which will be sure to delight and expand your expectations.
